Chinese Truffles

Chinese Truffles refer to three most important Asiatic varieties of Truffle: Tuber Sinensis, Tuber Indicum and Tuber Himalayensis. Tuber panzhihuanense

Most of Chinese truffles today come from Chinese provinces of Yunnan and Sichuan, where they are associated with mountain pines at an altitude of 2.000 to 2.500 meters in a temperate climate. Tuber indicum was originally described from specimens collected in India and associated with Quercus. They ripen from November to March.

Molecular studies suggest that Tuber indicum, Tuber sinense y Tuber pseudohimalayense are the same species. Tuber himalayese and Indicum are similar in appearance to the Tuber melanosporum , chocolate to black exterior with a matching interior, small vains, but with less aroma.

Tuber Panzhihuanense are one of the latest 10 species of white truffles , found recently in China, it grows with trees of Pines yunnanensis in the lime stone soils, it has a pleasant aroma and is good edible. Very close to Bianchetto in Italy. Their perfume varies between individuals of each species. Some have plenty of scent, others virtually none.
